SurfStat
This site has several good applets. Topics include central tendency, normal distributions, and linear regression. Source code is available for most.
 
R. Webster West's Applets
Links to a confidence interval applet (provides discussion of CI's vs. hypothesis testing), regression applet (which allows the user to add points to a distribution and tracks changes in the regression line), and a Central Limit Theorem applet.
